When freshly caught fish is exposed to air without prompt processing or flash-freezing below −35 °C, the organic compound trimethylamine oxide in its flesh is converted by bacteria into trimethylamine — that is the true culprit behind the fishy odour. Salmon can taste sweetly of the sea, or it can reek. A cat used to strong, pungent fish may well head down the road to pickiness.
